Diana's Diner - Smoked Salmon Pizza
Smoked salmon on pizza? I know, I know, you are wrinkling your face right now, saying, ooohhh gross! No way Jose! But please, hear me out. Would I ever let my friends down? This is the most deliriously delicious meal. With a big dinner salad, this can easily be a nice lunch or dinner for four. Add your favorite vino and voila, instant heaven. Dave and I polished a whole pizza off in one sitting(oink, oink), but we skipped the salad. Anyway, if you like smoked salmon, you will love this. Bon apetite.

You will need:

8 oz. smoked salmon
1/4 cup olive oil
6 large slices of red onion
1 tablespoon garlic powder
1 cup fresh chopped parsley
1 bunch chopped scallions
1/2 cup chopped fresh dill
12 oz. jar flame roasted red bell peppers
1 chopped fresh green bell pepper
salt & pepper to taste
1 large boboli Italian pizza shell

Preheat oven to 450. Heat olive oil, add onions, garlic powder, parsley, scallions, green pepper and dill. Saute till soft. Salt & pepper to taste. Remove from heat. Drain roasted red bell peppers and chop. Stir into sauteed veggies. Spread entire mixture evenly over Boboli pizza shell. Bake 8-10 minutes. Remove skin, if any, from salmon. Break salmon into bite size pieces and spread evenly  on pizza. Return to oven for 3-5 minutes. Remove, slice and enjoy! For the cheese lovers, place fresh grated parmesan on the table.
